Chicken:

  • 3 pounds boneless, skinless chicken thighs
  • 12 tablespoons avocado oil
  • Salt and pepper to taste

Orange Sauce:

  • 1 large bell pepper, chopped into bite-sized pieces
  • 1/2 small onion, chopped into bite-sized pieces
  • 1/2 medium orange, thinly sliced with seeds removed
  • 1 cup orange juice
  • 2 tablespoons orange marmalade
  • 1/2 cup white sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • Serve with cooked white rice, cauliflower rice, or noodles
  • Garnish with sliced green onions

Instructions

  1. Prepare the Chicken – Begin by trimming excess fat from the boneless, skinless chicken thighs. Cut into bite-sized chunks. In a bowl, add chicken, oil, salt, and pepper. Toss to coat.
  2. Make the Orange Sauce – Heat griddle to 375-400°F. In a saucepan on the griddle, combine all sauce ingredients. Heat until sugar dissolves. Set aside.
  3. Cook the Chicken – Place chicken on griddle, cook until golden brown. Flip and cook until internal temperature reaches 150-160°F.
  4. Add and Reduce the Sauce – Move chicken, pour half of the sauce. Stir, add remaining sauce. Allow sauce to thicken, stirring occasionally.
