Instructions

  1. Cook Meat and Onions: In a 4-quart soup pot over medium-high heat, cook and crumble the ground beef and Italian sausage. Halfway through, add the chopped yellow onion and continue cooking until softened—about 5 minutes total. Drain any excess grease from the pot.
  2. Sauté Garlic and Add Seasonings: Stir in the minced garlic and cook for another 1 minute until fragrant. Add tomato paste, dried oregano, dried basil, sugar, hot sauce (if using), salt, black pepper, and red pepper flakes. Stir everything to combine well.
  3. Add Liquids and Tomatoes: Pour in the chicken broth and use a silicone spatula to scrape and deglaze the bottom and sides of the pot. Add crushed tomatoes, undrained diced tomatoes, and the bay leaf. Bring the mixture to a boil, then reduce heat to simmer.
  4. Simmer Soup: Let the soup simmer gently to develop flavors. (If available, add a rind from Parmesan cheese to the pot during simmering to enhance taste.) Meanwhile, bring a pot of salted water to a boil for the noodles.
