  • 1½ cups (300 g) granulated sugar
  • 3 small or medium lemons, zested
  • 1 cup (226 g) unsalted butter, melted
  • 1 large egg (US), room temperature
  • 1 large egg yolk (US), room temperature
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (105 g) fresh blueberries
  • ¼ cup (50 g) granulated sugar for rolling (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Melt the butter: Melt the butter and let it cool in the fridge for 10 minutes.
  3. Prepare dry ingredients: In a bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
  4. Combine wet ingredients: In a mixing bowl, whisk sugar and lemon zest, then add melted butter, egg, egg yolk, and vanilla.
  5. Mix the dough: Stir dry ingredients into wet, then gently fold in blueberries.
  6. Form cookies: Use a cookie scoop to portion dough, roll in sugar if desired, and place on baking sheet.
  7. Bake: Bake for 10-12 minutes until edges are set and golden.
