Ingredients

Scale

Blondies

  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup butter (softened)
  • 1/4 cup sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon

Apple Filling

  • 2 large apples (chopped finely)
  • 2 Tbsp brown sugar
  • 1 Tbsp butter
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon

Maple Glaze

  • 2 Tbsp butter
  • 1/4 cup pure maple syrup
  • 1/2 cup powdered sugar
  • 1/4 tsp vanilla extract
  • 1/8 tsp ground cinnamon

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and prepare an 11×7 inch pan by lining it with tin foil or spraying it with cooking spray to prevent sticking.
  2. Prepare Apple Filling: On medium-low heat, cook the chopped apples, brown sugar, butter, vanilla extract, and cinnamon in a pan for 3-4 minutes until the apples soften and mixture is fragrant. Remove from heat and let it cool completely before assembling.
  3. Make Blondie Batter: In a mixing bowl, cream the softened butter until light and fluffy, about 1 minute. Add in both brown sugar and granulated sugar and mix until well combined. Beat in eggs one at a time, mixing well after each addition. Stir in salt and vanilla extract until combined.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and cinnamon. Gradually add this to the wet ingredients and stir until just combined, forming a thick batter.
  5. Assemble Blondies: Spread half of the blondie batter evenly on the bottom of the prepared pan, using a spatula or your hands. Layer the cooled apple filling evenly on top of the batter. Then spread the remaining blondie batter evenly over the apple layer.
  6. Bake: Bake in the preheated oven for 25-30 minutes until the top turns golden brown and a cake tester inserted in the center comes out clean.
  7. Prepare Maple Glaze: While blondies are baking, melt butter, maple syrup, vanilla extract, and cinnamon together over low heat. Remove from heat and sift in powdered sugar, whisking until fully combined. Allow glaze to cool and thicken for 8-10 minutes.
  8. Glaze Blondies: Let the baked blondies cool in the pan for about 10 minutes. Pour the maple glaze evenly over the warm blondies and allow the glaze to set before slicing.
  9. Serve: Slice the blondies into squares and enjoy your delicious maple glazed apple blondies!

Notes

  • For best results, use tart apples like Granny Smith to balance the sweetness.
  • Make sure the apple filling is completely cooled before layering to prevent the batter from becoming watery.
  • You can substitute the all-purpose flour with gluten-free flour blend for a gluten-free version.
  • Store leftover blondies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • Reheat slices briefly before serving to enjoy the gooey texture.
