Instructions

  1. Preheat and prepare cauliflower: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Toss the cauliflower florets with 2 tablespoons of olive oil, salt, and pepper until evenly coated. Spread them on the baking sheet in a single layer.
  2. Roast the cauliflower: Roast the cauliflower in the oven for about 25-30 minutes, stirring halfway through, until the florets are golden and tender.
  3. Sauté aromatics: While the cauliflower roasts, heat 1 tablespoon olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes. Add the minced garlic and ground cumin, cooking for an additional 1 minute to release their flavors.
  4. Combine and simmer: Add the roasted cauliflower to the pot, then pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes to allow the flavors to meld.
  5. Blend the soup: Use an immersion blender to puree the soup directly in the pot until smooth and creamy. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth, then return to the pot.
  6. Finish and season: Stir in the fresh lemon juice and adjust seasoning with additional salt and pepper if needed.
  7. Serve: Ladle the soup into bowls and garnish with chopped fresh parsley, if desired. Serve warm and enjoy!
