Noodles:

  • 11 oz dried ribbon noodles (300g)

For the Sauce:

  • 1½ tbsp cooking oil (e.g., grapeseed oil)
  • ½ cup scallions (white part), thinly sliced
  • 1½ tbsp minced garlic (4 cloves)
  • ¼ cup vegetable broth (low-sodium)
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp Chinese black vinegar
  • 1 tbsp Korean chilli powder/flakes (e.g., Gochugaru)

Garnish:

  • ¼ cup scallions (green part), thinly sliced
  • 1 tbsp toasted sesame seeds
  • Extra chilli flakes (optional)

Instructions

  1. Cook the Noodles: Boil the noodles according to package instructions until al dente. Drain and set aside.
  2. Prepare the Sauce: In a pan, heat the cooking oil and sauté the white part of the scallions and minced garlic until fragrant.
  3. Add vegetable broth, light soy sauce, dark soy sauce, Chinese black vinegar, and Korean chilli powder. Stir well and simmer for a few minutes.
  4. Combine Noodles and Sauce: Toss the cooked noodles in the prepared sauce until well coated.
  5. Serve: Garnish with green scallions, toasted sesame seeds, and extra chilli flakes if desired. Enjoy hot!

Notes

  • You can adjust the spice level by increasing or reducing the amount of Korean chilli powder/flakes.
  • For a vegetarian version, use vegetable broth instead of chicken broth.
