  • 1 tbsp olive oil
  • 1 small onion, peeled and chopped
  • 1 lb breakfast sausage, mild flavor
  • 4 large butter croissants or 8 small croissants
  • 1 cup shredded cheddar cheese
  • 6 large eggs

For the Egg Mixture:

  • 1/2 cup heavy whipping cream
  • 3 cups whole milk, divided
  • 1/2 tsp dry mustard powder
  • 1/2 tsp salt, plus additional for gravy to taste
  • 1/2 tsp black pepper, plus additional for gravy to taste
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder

For the Gravy:

  • 2 tbsp butter
  • 3 tbsp all-purpose flour

Instructions

  1. Sauté Onions and Sausage: Heat olive oil in a skillet and sauté chopped onions until soft. Add breakfast sausage, cook until browned. Drain fat and set aside.
  2. Prepare Croissant Mixture: Tear croissants into pieces. Combine with sausage mixture and cheese. Spread in a greased 9×13-inch baking dish.
  3. Make Egg Mixture: Whisk together eggs, cream, 1/2 cup milk, and spices. Pour over croissant mixture. Refrigerate overnight.
  4. Bake Casserole: Preheat oven to 350°F (175°C). Bake casserole for 35-45 minutes until browned on top.
  5. Prepare Gravy: Melt butter and reserved fat in a pan. Stir in flour, cook for a minute. Gradually add 2 1/2 cups milk, stirring until thickened. Season with salt and pepper.
