Ganache
- 12 ounces white chocolate, divided (We used Ghirardelli White Chocolate Chips)
- ¼ cup heavy cream
- 1 tablespoon unsalted butter
- 1 tablespoon peppermint extract
Coating
- 8 ounces dark chocolate (We used Ghirardelli Dark Chocolate Wafers)

- Prepare baking sheet. Line a large baking sheet with a silicone mat or wax paper and set aside. You may need two sheets depending on size.
- Melt ganache ingredients. In a medium saucepan over low heat, gently melt 8 ounces of white chocolate along with heavy cream, butter, and peppermint extract. Stir until smooth and combined.
- Chill ganache. Pour the melted mixture into a microwave-safe bowl and refrigerate until firm, at least 1 hour or longer for better firmness.
- Form truffle balls. Once set, scoop ganache into uniform 1-inch balls using a small scoop. Place them on the prepared baking sheet about an inch apart.
- Chill truffle balls. Return ganache balls to refrigerator until they firm up again, ensuring they hold shape for dipping.
- Melt dark chocolate. In a small microwave-safe bowl, melt dark chocolate wafers by heating in 15-20 second intervals, stirring between each, until smooth and glossy.
- Dip truffles. Remove ganache balls from fridge. Using a fork, dip each ball into the melted dark chocolate, tapping off excess, then place back on the baking sheet.
- Set coated truffles. Refrigerate dipped truffles for about 30 minutes until chocolate coating is fully set.
- Drizzle white chocolate. Melt the remaining 4 ounces of white chocolate and drizzle over the set truffles using a spoon or a piping bag with a small tip for a decorative finish.
- Garnish. Sprinkle with crushed peppermint candy or chocolate sprinkles if desired to enhance presentation and flavor.
