  • ¼ cup heavy cream
  • 1 tablespoon unsalted butter
  • 1 tablespoon peppermint extract

Coating

  • 8 ounces dark chocolate (We used Ghirardelli Dark Chocolate Wafers)

Instructions

  1. Prepare baking sheet. Line a large baking sheet with a silicone mat or wax paper and set aside. You may need two sheets depending on size.
  2. Melt ganache ingredients. In a medium saucepan over low heat, gently melt 8 ounces of white chocolate along with heavy cream, butter, and peppermint extract. Stir until smooth and combined.
  3. Chill ganache. Pour the melted mixture into a microwave-safe bowl and refrigerate until firm, at least 1 hour or longer for better firmness.
  4. Form truffle balls. Once set, scoop ganache into uniform 1-inch balls using a small scoop. Place them on the prepared baking sheet about an inch apart.
  5. Chill truffle balls. Return ganache balls to refrigerator until they firm up again, ensuring they hold shape for dipping.
  6. Melt dark chocolate. In a small microwave-safe bowl, melt dark chocolate wafers by heating in 15-20 second intervals, stirring between each, until smooth and glossy.
  7. Dip truffles. Remove ganache balls from fridge. Using a fork, dip each ball into the melted dark chocolate, tapping off excess, then place back on the baking sheet.
  8. Set coated truffles. Refrigerate dipped truffles for about 30 minutes until chocolate coating is fully set.
  9. Drizzle white chocolate. Melt the remaining 4 ounces of white chocolate and drizzle over the set truffles using a spoon or a piping bag with a small tip for a decorative finish.
  10. Garnish. Sprinkle with crushed peppermint candy or chocolate sprinkles if desired to enhance presentation and flavor.
