For the Sugar Cookie Dough
- ½ cup unsalted butter, room temperature
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract or vanilla bean paste
- 2 ½ cups + 2 tbsp all-purpose flour
- ½ teaspoon fine sea salt
- 1/2 tsp baking soda
- 2/3 cup strawberry preserves
For the Glaze
- 1 cup powdered sugar
- 1 ½–2 tbsp whole milk
- ½ tsp vanilla extract
- Rainbow sprinkles, for decorating
- Line the Pan: Preheat oven to 375°F. Line an 8×8 metal baking pan with parchment paper.
- Cream Butter and Sugar: In a mixing bowl, cream butter and sugar until light and fluffy.
- Add Eggs and Vanilla: Mix in eggs and vanilla extract until combined.
- Mix Dry Ingredients: Combine flour, salt, and baking soda until dough forms.
- Chill Dough: Refrigerate dough for 20 minutes.
- Layer Dough: Press half of the dough into the pan.
- Add Preserves: Spread strawberry preserves over dough.
- Add Top Layer: Place remaining dough on top of preserves.
- Bake: Bake for 25-28 minutes until golden brown.
- Add Glaze: Mix sugar, milk, and vanilla for the glaze. Pour over bars and add sprinkles.
- Cool and Serve: Let bars cool, then cut into 15 pieces and enjoy!
