For the Sugar Cookie Dough

  • ½ cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 2 ½ cups + 2 tbsp all-purpose flour
  • ½ teaspoon fine sea salt
  • 1/2 tsp baking soda
  • 2/3 cup strawberry preserves

For the Glaze

  • 1 cup powdered sugar
  • 1 ½2 tbsp whole milk
  • ½ tsp vanilla extract
  • Rainbow sprinkles, for decorating

Instructions

  1. Line the Pan: Preheat oven to 375°F. Line an 8×8 metal baking pan with parchment paper.
  2. Cream Butter and Sugar: In a mixing bowl, cream butter and sugar until light and fluffy.
  3. Add Eggs and Vanilla: Mix in eggs and vanilla extract until combined.
  4. Mix Dry Ingredients: Combine flour, salt, and baking soda until dough forms.
  5. Chill Dough: Refrigerate dough for 20 minutes.
  6. Layer Dough: Press half of the dough into the pan.
  7. Add Preserves: Spread strawberry preserves over dough.
  8. Add Top Layer: Place remaining dough on top of preserves.
  9. Bake: Bake for 25-28 minutes until golden brown.
  10. Add Glaze: Mix sugar, milk, and vanilla for the glaze. Pour over bars and add sprinkles.
  11. Cool and Serve: Let bars cool, then cut into 15 pieces and enjoy!
