These Rosemary Parmesan Mozzarella Pretzels are a delightful twist on the classic pretzel, stuffed with gooey mozzarella cheese and flavored with aromatic rosemary and parmesan. They are perfect for snacking or as a fun party appetizer.

Dough:

  • 2 ¼ teaspoons active dry yeast
  • 1 ½ tablespoons sugar
  • 1 cup warm water (110°F)
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon finely chopped fresh rosemary
  • ½ cup grated parmesan cheese
  • 2 tablespoons unsalted butter, melted

Additional:

  • 12 sticks of mozzarella string cheese
  • 10 cups water
  • ⅔ cup baking soda
  • 1 large egg, beaten
  • Coarse sea salt, for sprinkling

Instructions

  1. Dissolve Yeast: In a large bowl, dissolve the yeast and sugar in warm water. Let sit for 5 minutes until frothy.
  2. Mix Dough: Add flour, salt, rosemary, and parmesan to the yeast mixture. Mix until a dough forms.
  3. Knead Dough: Knead the dough on a floured surface until smooth and elastic.
  4. Rise: Place the dough in an oiled bowl, cover, and let rise for 1 hour.
  5. Preheat: Preheat oven to 450°F and line a baking sheet with parchment paper.
  6. Boil Water: Boil 10 cups of water with baking soda.
  7. Form Pretzels: Divide dough, wrap each piece around a mozzarella stick.
  8. Boil Pretzels: Boil each pretzel, then transfer to baking sheet.
  9. Egg Wash: Brush each pretzel with beaten egg and sprinkle with sea salt.
  10. Bake: Bake for 12-15 minutes until golden brown.
  11. Finish: Brush with melted butter before serving.
