  • 1 Large Egg Yolk (room temperature)
  • 1 cup Granulated Sugar
  • 1 tablespoon Vegetable Oil
  • 1 teaspoon Vanilla Extract

Chocolate Mixture:

  • 6 tablespoon Unsalted Butter
  • 1 cup Semi-Sweet Chocolate Chips
  • ¼ cup Unsweetened Cocoa Powder
  • 1 teaspoon Espresso Powder (optional)
  • Sea Salt Flakes (for topping cookies)

Instructions

  1. Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  2. Wet Ingredients: Using a mixer, beat the eggs, egg yolk, sugar, oil, and vanilla until frothy.
  3. Chocolate Mixture: Melt chocolate chips and butter, then mix in cocoa powder and espresso powder.
  4. Mix melted chocolate into wet ingredients, then add dry ingredients and mix until combined.
  5. Scoop dough onto baking sheets, sprinkle with sea salt flakes, and bake at 350ºF for 8-10 minutes.
