Instructions

  1. Cook sausage: Heat 1 tablespoon olive oil in a cast-iron skillet over medium heat. Add the sliced cooked sausage coins and cook for 5 minutes on one side, then flip and cook for 3 minutes on the other side. Remove the sausage to a large plate. Keep some of the rendered oil in the skillet for cooking the vegetables, transferring any excess to a small heat-proof bowl.
  2. Prepare bell pepper: In the same skillet, add the diced red bell pepper and cook for about 4 minutes over medium heat. Add some reserved sausage oil if needed to prevent sticking. Once cooked, transfer the bell pepper to the plate with the sausage.
  3. Cook zucchini: Using the same skillet, cook the sliced zucchini for about 3 minutes on medium heat, adding reserved oil as necessary to avoid sticking.
  4. Remove corn kernels: Slice the corn kernels off the cooked cobs using a knife, preparing 2 cups for the dish.
  5. Assemble and finalize: In the skillet, combine the cooked sausage, bell pepper, zucchini, and corn kernels. Add the reserved sausage oil back into the pan. Sprinkle ½ teaspoon chili powder over the mixture and stir well. Reheat gently on low heat until warmed through.
  6. Garnish and serve: Remove from heat and top with freshly chopped cilantro before serving. Adjust salt only if necessary, as sausage provides plenty of seasoning.
