For the ground beef:
- 1 lb ground beef (85% lean)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 tbsp tomato paste
- 1 tsp Worcestershire sauce
- ½ cup beef broth
- 1 tsp salt
- ½ tsp black pepper
For the mashed potatoes:
- 2 lbs potatoes (Yukon Gold or Russet), peeled & diced
- 3 tbsp butter
- ½ cup milk
- ½ tsp salt
- ¼ tsp black pepper
- Boil Potatoes: Boil potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter, milk, salt, and pepper. Set aside.
- Cook Ground Beef: In a skillet over medium heat, cook ground beef until browned (5–7 minutes). Drain excess fat if needed.
- Add Vegetables and Seasoning: Add onion and garlic to the beef, cooking until softened (3–4 minutes). Stir in tomato paste, Worcestershire sauce, beef broth, and frozen vegetables. Simmer for 5 minutes.
- Preheat Oven: Preheat oven to 375°F (190°C).
- Assemble Pie: Spread the beef mixture evenly in a baking dish. Top with the mashed potatoes, spreading them out evenly.
- Bake: Bake uncovered for 20 minutes or until the mashed potatoes are slightly golden.
