For the ground beef:

  • 1 lb ground beef (85% lean)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • ½ cup beef broth
  • 1 tsp salt
  • ½ tsp black pepper

For the mashed potatoes:

  • 2 lbs potatoes (Yukon Gold or Russet), peeled & diced
  • 3 tbsp butter
  • ½ cup milk
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Boil Potatoes: Boil potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter, milk, salt, and pepper. Set aside.
  2. Cook Ground Beef: In a skillet over medium heat, cook ground beef until browned (5–7 minutes). Drain excess fat if needed.
  3. Add Vegetables and Seasoning: Add onion and garlic to the beef, cooking until softened (3–4 minutes). Stir in tomato paste, Worcestershire sauce, beef broth, and frozen vegetables. Simmer for 5 minutes.
  4. Preheat Oven: Preheat oven to 375°F (190°C).
  5. Assemble Pie: Spread the beef mixture evenly in a baking dish. Top with the mashed potatoes, spreading them out evenly.
  6. Bake: Bake uncovered for 20 minutes or until the mashed potatoes are slightly golden.
  7. Serve: Let the Shepherd’s Pie cool slightly before serving. Enjoy!
