Beef:
- 2 lbs beef chuck, cut into 1-inch cubes
Broth Mixture:
- 1 cup red wine (Burgundy or Pinot Noir)
- 2 cups beef broth
Vegetables:
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 cups carrots, sliced
- 2 cups mushrooms, quartered
Seasonings:
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper, to taste

- Brown the Beef: In a large skillet, heat olive oil over medium-high heat. Brown the beef cubes on all sides, then transfer to the slow cooker.
