Instructions

  1. Cook the Noodles: Bring a large pot of water to a boil and cook the brown rice noodles according to the package instructions. Drain and set aside.
  2. Sauté Aromatics: Finely mince the garlic cloves and heat 1 tablespoon of oil in a sauté pan over low heat. Add the garlic and sauté for about 2 minutes until golden brown, being careful not to burn it. Add the fresh grated ginger and sauté for an additional 1 minute to release its aroma.
  3. Make the Peanut Sauce: Remove the pan from heat and stir in the peanut butter, tamari or soy sauce, rice vinegar, toasted sesame oil, sriracha, maple syrup or honey, red pepper flakes, and chili garlic sauce if using. Begin by adding ⅓ cup of hot water and whisk vigorously until the sauce is smooth and creamy. Add more hot water as needed to reach your preferred sauce consistency.
  4. Adjust Seasoning: Taste the peanut sauce and adjust flavors by adding more tamari for saltiness, sriracha for heat, or maple syrup for sweetness, according to your liking.
  5. Combine Noodles and Sauce: Toss about half of the peanut sauce with the cooked noodles until evenly coated. You can add more sauce depending on your preference. Reserve the remaining sauce for adding to vegetables, proteins, or extra flavor at the table.
  6. Serve: Plate the noodles and garnish with crushed peanuts, sliced scallions, and a sprinkle of red pepper flakes. Serve alongside your choice of veggies or protein such as tofu, chicken, or shrimp for a complete meal.
