For the Cookies:

  • 1/2 cup (113 g) unsalted butter, room temperature
  • 1/2 cup (100 g) granulated sugar
  • 1/3 cup (66 g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla
  • 2 cups (250 g) all-purpose flour, spooned and leveled
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup very fresh, firm strawberries, patted dry and stems removed, chopped into small bits
  • 6 to 8 ounces white chocolate, chopped into chunks

Instructions

  1. Preheat the oven and prepare baking sheet: Preheat the oven to 350°F. Line a large baking sheet with parchment paper.
  2. Cream butter and sugars: In a stand mixer, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add egg and vanilla: Mix in the egg and vanilla until well combined.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Add strawberries and white chocolate: Gently fold in the chopped strawberries and white chocolate chunks.
  7. Portion dough and bake: Use a cookie scoop to form dough balls and bake for 10-12 minutes until edges are set.

Notes

  • For best results, use fresh strawberries and high-quality white chocolate.
  • Do not overmix the dough to keep the cookies soft and tender.
