  • 1 cup, plus 2 tablespoons (140 g) all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla
  • 1 tablespoon molasses (or honey)

Strawberry Icing:

  • 1 cup (120 g) powdered sugar, sifted
  • 2 tablespoons freeze-dried strawberry powder
  • 2 to 3 tablespoons whole milk
  • 1 drop gel pink food coloring, optional

Instructions

  1. Prepare the Cookies: Line a large cookie sheet with parchment paper. Melt butter in a saucepan until golden brown. Let it cool. Pulse oats in a food processor. Mix dry ingredients and set aside.
  2. Combine the Ingredients: Whisk sugars into the cooled butter, then add egg, vanilla, and molasses. Stir in dry ingredients and oats.
  3. Chill and Bake: Chill the dough, then scoop onto baking sheets. Bake at 350°F for 10-11 minutes.
  4. Prepare the Strawberry Icing: Mix powdered sugar, strawberry powder, and milk until smooth. Add food coloring if desired.
  5. Ice the Cookies: Dip the cooled cookies into the icing and allow them to set on a wire rack.
