Scale

Main Ingredients

  • Cooking spray
  • 1 medium yellow onion, diced
  • 1 large green bell pepper, diced
  • 1 lb ground breakfast sausage
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon fine salt, divided
  • ½ teaspoon black pepper, divided
  • 6 slices cooked bacon, chopped, divided
  • 2 cups shredded Colby-Cheddar or Colby-Jack cheese, divided
  • 6 eggs
  • 1 ¼ cups milk of choice (2% recommended)
  • 1 (28-ounce or two 16-ounce) package frozen tater tots or crispy crowns

Optional for Serving

  • Sour cream
  • Sliced green onions
  • Hot sauce
  • Additional chopped cooked bacon

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C). Lightly mist a 9×13-inch baking dish with cooking spray and set it aside to prepare the casserole.
  2. Cook Sausage and Vegetables: Heat a large skillet or Dutch oven over medium-high heat. Once hot, spray with cooking spray and add the diced onion, green bell pepper, and ground breakfast sausage. Cook while stirring occasionally for 8-10 minutes until the vegetables are crisp-tender and the sausage is fully cooked. Season with garlic powder, Italian seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper, mixing well throughout.
  3. Add Bacon to Sausage Mixture: Stir in 4 slices of the chopped bacon into the cooked sausage and vegetable mix. Then immediately transfer this mixture to your prepared baking dish, spreading it evenly.
  4. Add Cheese and Tater Tots: Sprinkle 1 cup of shredded cheese over the mixture in the baking dish. Add the entire package of frozen tater tots on top. Gently toss everything together in the dish to combine and spread out evenly.
  5. Prepare Egg Mixture: In a medium bowl or large glass measuring cup, whisk together all 6 eggs and 1 ¼ cups of milk until smooth. Season with the remaining ½ teaspoon salt and ¼ teaspoon black pepper, whisking well to distribute the seasoning.
  6. Pour Egg Mixture: Pour the egg mixture evenly over and around the ingredients in the baking dish, ensuring it seeps through the tater tots and meat mixture.
  7. Top with Cheese and Bacon: Evenly sprinkle the remaining 1 cup of shredded cheese over the casserole. Then top with the remaining 2 slices of chopped cooked bacon for a savory finish.
  8. Bake: Place the casserole in the preheated oven and bake for 25-35 minutes, checking from 25 minutes onward. The casserole is done when the center is set and the top is lightly browned.
  9. Optional Broil: For an extra crispy top, switch the oven to the broiler setting on High and broil the casserole for 1-2 minutes until the cheese is golden and bubbly. Watch closely to prevent burning.
  10. Serve: Garnish each serving with optional sour cream, sliced green onions, hot sauce, or additional cooked bacon to taste. Serve warm and enjoy your hearty breakfast casserole!

Notes

  • Use fresh or leftover cooked bacon for topping and mixing into the casserole for added flavor and texture.
  • Frozen tater tots can be swapped for crispy crowns or similar potato bites based on preference or availability.
  • This casserole can be prepped the night before; just assemble and refrigerate, then bake in the morning, adding a few extra minutes to baking time.
  • For a lower-fat option, use turkey sausage and reduce the amount of cheese or swap with a low-fat cheese.
  • Adjust seasonings to taste, especially salt and pepper, depending on the saltiness of your sausage and bacon.
  • Make sure to use a deep 9×13-inch dish to prevent overflow during baking.
