Chicken Filling:

  • 1 pound ground chicken
  • 1 cup cooked rice
  • 1 cup diced pineapple (fresh or canned)
  • 1/2 cup teriyaki sauce
  • 1/2 cup chopped green onions
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper to taste

Peppers:

  • 4 large bell peppers (any color)
  • Sesame seeds for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Peppers: Cut the tops off the bell peppers, remove seeds and membranes, and place them upright in a baking dish.
  3. Cook Chicken: In a skillet, cook ground chicken in olive oil until browned. Add garlic powder, ginger powder, salt, and pepper. Stir in rice, pineapple, and teriyaki sauce. Cook until heated through.
  4. Stuff Peppers: Spoon chicken and rice mixture into each bell pepper.
  5. Bake: Cover with foil and bake for 25 minutes. Uncover and bake for another 10 minutes until peppers are tender.
  6. Garnish and Serve: Garnish with green onions and sesame seeds before serving.
