Ingredients

Scale

Chili

  • 2 tablespoons olive oil
  • 1 small yellow or white onion, diced
  • 2 cloves garlic, minced
  • pounds ground beef
  • 1 tablespoon brown sugar
  • 2 tablespoons chili powder
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup beef broth
  • 1 (15 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 tablespoon tomato paste
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can red kidney beans, drained and rinsed
  • ¼ teaspoon cayenne pepper (optional for spice)

Optional Toppings

  • Shredded cheddar cheese
  • Tortilla chips
  • Finely chopped red onions
  • Thinly chopped green onions
  • Sour cream

Instructions

  1. Sauté onions and garlic: Heat a medium dutch oven or soup pot on medium heat. Add the olive oil and diced onion. Sauté for 3-4 minutes until onions become translucent, stirring occasionally. Add minced garlic and cook for another minute to release its aroma.
  2. Brown the beef: Add the ground beef to the pot and break it up with a wooden spoon. Cook for about 5 minutes until the beef is fully browned, stirring occasionally to crumble the meat.
  3. Add spices: Stir in the brown sugar, chili powder, onion powder, garlic powder, cumin, salt, and black pepper. Cook for 30 seconds more, stirring constantly to blend the spices evenly into the meat.
  4. Combine liquids and beans: Pour in the beef broth, crushed tomatoes, tomato sauce, and tomato paste. Add the drained black beans and red kidney beans. Stir well to combine all ingredients.
  5. Simmer the chili: Bring the chili to a low simmer. Cook uncovered for 20-25 minutes, stirring occasionally to prevent sticking and to allow flavors to meld and thicken the chili.
  6. Serve with toppings: Spoon the chili into bowls and garnish with your choice of toppings such as shredded cheddar cheese, tortilla chips, finely chopped red onion, green onions, or a dollop of sour cream.

Notes

  • For extra heat, increase the cayenne pepper or add chopped jalapeños.
  • You can substitute ground turkey or chicken for a leaner option.
  • Simmering longer will deepen the flavor, up to 1 hour on low heat if desired.
  • Drain and rinse canned beans to reduce sodium content.
  • Serve with cornbread or over rice for a complete meal.
