Instructions

  1. Prepare the Coffee Mixture: Brew a strong cup of espresso and allow it to cool completely to room temperature, ensuring the coffee flavor is rich yet not too hot to affect the mascarpone.
  2. Make the Mascarpone Filling: In a large mixing bowl, combine the mascarpone cheese, crushed ladyfinger cookies, cooled espresso, sugar, and vanilla extract. Mix until smooth and evenly blended to achieve the classic tiramisu flavor in truffle form.
  3. Chill the Mixture: Refrigerate the combined mixture for about one hour. This step helps firm up the mixture so it becomes easier to shape into balls.
  4. Shape the Truffles: Using a cookie scoop or tablespoon, form small balls from the chilled mixture and place them onto a parchment-lined baking sheet to prepare for coating.
  5. Coat the Truffles: Melt the dark chocolate gently over a double boiler or in short bursts in the microwave, stirring until smooth. Dip each truffle into the melted chocolate, ensuring full coverage, and let the excess drip off before returning to the sheet.
