Chicken:

  • 1 large chicken breast (cut into ½-inch x 1-inch pieces)

Rice:

  • 2 cups white rice (rinsed well and drained)

Vegetables:

  • 1 large carrot (grated)
  • 1 small onion (finely chopped)

Other:

  • 2 tablespoons unsalted butter
  • ¼ cup ketchup
  • 2 ½ cups water or low-sodium chicken broth
  • 1 teaspoon salt
  • ⅛ teaspoon freshly ground black pepper
  • ⅛ teaspoon cayenne pepper

Instructions

  1. Cook the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken pieces and sauté until golden and fully cooked.
  2. Add Vegetables: Stir in the diced onion and sauté for about 3 minutes until softened. Add the grated carrot and continue cooking for another 2 minutes.
  3. Incorporate Butter and Ketchup: Add 2 tablespoons of butter and ¼ cup of ketchup. Stir well until the butter has melted and everything is evenly combined.
  4. Add Rice and Seasoning: Mix in the rinsed rice, ensuring it’s evenly coated with the sauce. Sprinkle with salt, black pepper, and cayenne pepper, then stir to combine.
  5. Cook the Plov:
    Rice Cooker Method: Transfer the mixture to a rice cooker, add 2 ½ cups of water or broth, and adjust seasoning if needed. Set the rice cooker to “White Rice.”
    Stovetop Method: Transfer the mixture to a pot with a tight-fitting lid. Add the water or broth, cover, and cook over medium-low heat for about 20 minutes, or until all the liquid is absorbed.
  6. Serve: Fluff the rice with a fork and serve warm.
