  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces cremini mushrooms, sliced
  • 4 cups fresh spinach
  • 1 teaspoon dried basil
  • 1⁄2 teaspoon dried oregano
  • 1⁄2 teaspoon ground nutmeg

Cheese Sauce:

  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1⁄2 cup Parmesan cheese, grated
  • 2 cups heavy cream
  • 1 1/2 cups vegetable broth

Other:

  • 12 lasagna noodles, cooked and drained
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour

Instructions

  1. Main Vegetable Filling: Heat olive oil in a skillet, sauté onion until soft, add garlic, mushrooms, spinach, herbs, cook until wilted. Set aside.
  2. Cheese Sauce: Make a roux with butter and flour, add cream, broth, simmer until thickened. Season.

  4. Preheat oven. Layer sauce, noodles, vegetable mix, cheese sauce, repeat. Top with noodles and cheese sauce.

  6. Cover with foil, bake, then uncover and bake until golden and bubbly. Rest before serving.
